Nine, 15 and 25 years. Aged vinegar. Definitely not what we put into our Asian noodles (Bak Chor Mee to be specific). No, this is a different class of sweet and sour. This is Traditional Balsamic Vinegar from Reggio Emilia, a region in Northern Italy.

Traditional Balsamic Vinegar is the more costly type of Balsamic vinegar. It is considered the “original” and is probably powerful stuff so just a few drops in selected dishes will make you closer to the Master Chef you always wanted to be.
