Regent Singapore and the Embassy of Italy have collaborated for Festa della Repubblica Italiana (Festival of the Republic) with a gala wine dinner on 3 June 2022 amongst other dining experiences. Enjoy pre-dinner entertainment by maestro Manuel Cini. Enjoy an aperitivo in hand and browse a collection of emotive yet heroic art pieces by Laura Caretta. Convene at Basilico for an eight-hands wine-pairing dinner helmed by Regent Singapore’s three Italian chefs, Executive Chef Angelo Ciccone, Executive Sous Chef Luca Beccalli and Basilico Head Chef Valerio Pierantonelli. Executive Chef of The Ritz-Carlton Millenia Singapore Massimo Pasquarelli will guest stint for the evening and lend his personal recipes over the course of the week at Basilico. From 30 May to 5 June 2022, enjoy specially curated offerings co-organised with the Italian Women’s Association at the F&B outlets at Regent Singapore.

Having just published a compilation of Italian homecooking recipes Journey into our Home Recipes, a representative will bring pages of their tome to life via pass-around dishes at Basilico and Tea Lounge. 100% percent of the sales proceeds from their cookbook ($35, available at Regent’s F&B outlets) will be donated to the Rainbow Centre, a non-profit organisation that empowers and supports persons with disabilities. 

From 30 May to 4 June 2022 at Dolcetto, enjoy 10 different flavoured cannolis such as Bronte pistachio, Sorrento lemon, riccota and dark chuao chocolate. riced at S$4 each or S$22 for a box of six. The Millefoglie al Tiramisu features layers of puff pastry alternate with coffee-laced mascarpone; and fried Zeppole di San Giuseppe donut balls with fillings of custard and Amarena cherry – perfect with a strong shot of Illy espresso or other speciality coffees (from S$14 for a single portion). 

On 1 June, from 6.30 pm to 7.30 pm, artist Laura Caretta will personally preside over her art exhibition, where 20% of the sales proceeds will be donated to a charity of her choice. Indulge in high tea at Tea Lounge that focuses firmly on the region that brings aromatic Norcia black truffles, creamy burratas and abundant antipasti from 30 May to 5 June 2022. On weekends, the spread includes a savoury spread of Amarone-braised Wagyu beef cheeks, Roman-style pork belly and Pinot Grigio-marinated chicken. Roving trolleys will make their rounds carrying the day’s special or Campari cocktails. S$58++ per person for single-seatings on weekdays or S$78++ per person for weekends with two seatings.

At Basilico, help yourself to unlimited serves of antipasti, cheese and dessert for S$98++, then choose from over nine mains. Every night, Giuseppe Timperio, scion of extra virgin olive oil producers Timperio will go from table to table, giving diners a taste of the single varietal liquid gold his family has cultivated for years. Established in Colletorto, in the Molise region of Italy as far back as 1943, the company has evolved from a small stone mill to a global corporation. 

In addition to olive oil appreciation and cheese tastings from Basilico’s cheese room, diners will also have their palates pampered with another quintessential Italian staple: Parma ham from Consorzio del Prosciutto. Watch the mastery of slicing paper-thin pieces from a whole leg and enjoy the deeply savoury meat with a host of other cold cuts and antipasti from the Basilico buffet line. 

Saturday, 4 June, 3.30 pm to 5p m is when Basilico will receive its youngest chefs yet. Chef Angelo and Chef Luca will conduct a pizza-making class ($50 nett per child, 12 years old and under) with children from APICS: Italian Cultural Centre in Singapore. Surely there’s no better lesson in Italian studies than a hands-on session with flour, sauce and cheese! 100% fun and deliciousness guaranteed. 

On Sunday, 5 June, the celebrations conclude with an elevated brunch of special mains with the option of adding on wine pairings by Ferrari Trento, specialists in the production of sparkling wine via the traditional Metodo Classico method ($138++, additional $60++ for wine pairing).

At Manhattan for two nights only on 2 and 3 June 2022, Matteo Zed, a leading amaro expert and bar director of The Court in Rome will craft five signature cocktails with spirits by Campari and Remy Cointreau. Foie Gras Bruschetta, Pizzetta Americana and Sicilian Lobster Arancini will be available to pair. A la carte prices from S$25 for cocktails and S$15 for food.
