Short grain and glutinous rice are cooked together with lotus leaves and kelp to infuse the rice with umami and lotus flavours before being wrapped again in lotus leaves for a second steaming. The rice is then topped with a chunk of foie gras and finished with grated yuen cheong (preserved liver sausage). This Nanyang-style dish is definitely not to be missed if you enjoy traditional lotus leaf rice.​
