This culinary showcase features five acclaimed chefs from IHG hotels in Singapore, including Holiday Inn Singapore Atrium, Crowne Plaza Changi Airport, Hotel Indigo Singapore Katong, InterContinental Singapore, and voco Orchard Singapore. Leading the team is SFF 2025’s Heritage Cuisine Ambassador, Chef Damian D’Silva. Together, they will craft a five-course menu highlighting dishes such as Mussel Otak Otak, Vitello Tonnato, Assam Laksa with Seared Halibut, Buah Keluak Chicken Roulade with Black Truffle, Oven-Baked Sustainable Barramundi with Singapore Chilli Crab Sauce, and a Coconut Pandan Calamansi Ombre dessert. The experience is further elevated with ceremonial service parades, live music, immersive storytelling, and The Heritage Bar’s exclusive cocktail creations.

At Baba Chews, Chef Huang Jiaxing from Hotel Indigo Singapore Katong teams up with Chef Anas Syafiq from Hotel Indigo Kuala Lumpur on the Park to present a six-course menu called Stories of the Land, Soul of the City. The dishes reflect their hometown influences through ingredients and technique. Highlights include Satay Tebu, a beef skewer on sugarcane with kuah lemak; Hamachi Ceviche inspired by yusheng with wanton skin and ginger floss; Bagan Dato Mud Crab with curry mayo, tobiko and cress; Bidor Orange Bird, aged duck with orange jus, hoisin, mash and achar; and Bandung Lychee Rose Sorbet with bandung jelly, condensed milk snow and lychee.
Food Truck City Tours18 August to 14 September 2025
InterContinental Singapore is running a roving food truck that serves signature dishes from chefs across IHG’s Singapore hotels. The menu includes Lasooni Chicken Tikka, Salted Egg Yolk Chicken Taco, Singapore Laksa with Baby Abalone, Tiger Prawn Massaman Curry, and Wagyu Beef Rendang. The Food Truck City Tours will stop at Ocean Financial Centre, Keppel South Central, Downtown East Pasir Ris, and Geneo Science Park, with a dedicated Food Truck Park at Keppel South Central from 23 August to 3 September 2025.
