Before Sophia, this address was closely associated with Astor Grill, The St. Regis Singapore’s refined steakhouse, known for its polished grill-room sensibility, premium cuts and classic luxury ambience. Together with the earlier era of Brasserie Les Saveurs, the space carried a reputation for formality and occasion-driven dining. Sophia represents a clear evolution from both, retaining the sense of grandeur guests expect from St. Regis, while shifting the mood towards warmth, movement and Italian-style sociability, better suited to contemporary dining and leisurely Sunday brunches.
Sophia’s interiors set the tone the moment you step inside. The space is grand yet warmly composed, framed by soaring ceilings, expansive windows and a central crystal chandelier that draws the eye upward. Soft neutral tones, layered textures and refined Italian detailing create a sense of modern elegance rather than formal stiffness.
Tables are generously spaced, encouraging unhurried conversation, while daylight filters in during brunch hours, giving the room a relaxed, almost residential glow. It is a dining room that feels social and theatrical without being loud, perfectly suited to long Sunday lunches that drift comfortably into the afternoon.




Sunday Brunch at Sophia unfolds as a lively, free-flowing affair. Guests are welcomed with Mimosas and Aperol Spritzes as a live band sets an easy, celebratory rhythm across the room. The atmosphere is intentionally convivial, echoing the Italian tradition of gathering around food, music and shared tables.
At the heart of Sophia’s Sunday Brunch is Chef de Cuisine Angelo Sergio, whose cooking anchors the restaurant’s modern Italian identity. A native of Puglia, Chef Angelo brings a deeply regional approach to the table, drawing inspiration from 11 different Italian regions, while staying firmly rooted in honest ingredients and time-honoured techniques.
His food philosophy is deliberately unfussy but precise. Classic Italian recipes are respected, not reinvented for shock value, then quietly elevated through quality produce and refined execution. This sensibility carries through to the brunch format, where dishes are designed for sharing, repetition and indulgence, rather than rigid plating or overwrought presentation.




The brunch spread is designed for indulgence and interaction rather than rigid courses. Highlights include a mozzarella bar, artisanal cheeses, pastas prepared à la minute and generous pass-arounds of Sophia’s signature tiramisu. A roaming gelato cart makes its way through the dining room, scooping freshly made gelato tableside, adding a playful sense of theatre to the experience.




For those who enjoy their Sundays well-lubricated, the brunch includes bottomless pours of R de Ruinart Champagne alongside house wines, rounding out a leisurely, celebratory afternoon at Singapore’s best address.
Sunday Brunch at Sophia is offered in three tiers. It starts at S$138++, which includes free-flow soft drinks. For S$168++, guests enjoy unlimited pours of house red and white wines, prosecco, Italian beers, plus brunch favourites like mimosas and Aperol spritzes. The top-tier option is S$198++, featuring free-flow R de Ruinart Brut Champagne, alongside house wines, prosecco, Italian beers, mimosas and Aperol spritzes.
