
Lao Ma Bàn Mian 老媽拌麵, a popular noodle brand from Tainan in Taiwan endorsed by A-Lin and other celebrities, has landed in Singapore in the newly revamped basement of West Mall. This is the 12-year-old brand’s first outlet in Singapore. Lao Ma Bàn Mian specialises in Guan Miao noodles from Tainan. These sun-dried noodles are made using traditional methods to preserve their unique chew and aroma. Trust us. They’re worth the hype. You can choose between the signature wavy Guan Miao noodles and the more traditional straight smooth ones. Both soak up sauces beautifully and have that springy bite you can’t stop thinking about.

We’ve tried a few of the dishes, and let’s just say—these dry noodles slap. Hard. The texture is everything. Not too soft, not too firm. Just the right amount of resistance with every bite. And when tossed in sauces like the Chilli Oil Preserved Egg and Meat Sauce (S$12.50), it’s a whole experience. Rich, umami, with a hint of heat and that creamy preserved egg—it hits all the right spots. There’s also a Garlic Fermented Soy Pork Chop Noodles bowl (S$15.90) that delivers serious street food vibes. Marinated for 24 hours, the pork is tender, flavourful, and unforgettable. There are eight dry noodles on the menu.

The restaurant sits at #B1-K10/K23 in West Mall, just a short walk from Bukit Batok MRT. It’s open daily 11am to 9pm from 15 April 2025 and is also available on GrabFood, Foodpanda, Oddle, and Deliveroo.
