14 July 2011, Singapore – Highly regarded Mumbai-born Indian Cuisine Chef Milind Sovani has recently set up his own consultancy service that will work closely with hospitality groups across the region on:

  • Concept development for a new restaurant in a hotel
  • Restaurant consultancy for an existing restaurant in a hotel
  • Project set ups
  • Product development
  • Menu design
  • Kitchen planning menu planning
  • Planning and execution of food festivals relating to menu and theme
  • High end banquets

Chef Sovani is this year’s Singapore Food Festival’s Official Consultant Chef and head chef for Spice and Canapes in the Sky, another of the food festival’s programme.

Chef Sovani has also rolled out a hi-end banqueting service in India which will offer sit-down banquets, degustation menus, caterings to summits and conventions in world gourmet summit style and offering Singapore and South East Asian cuisines to Mumbai in India.   Chef Sovani has trained under the finest Indian chefs as well as renowned French Chef Roger Moncorte.

During his stint as Chef-Director at The Song of India, he introduced a new look and dimension to Indian cuisine in Singapore. Being knowledgeable and experienced on the properties and usage of a myriad of spices, Chef Sovani has has created dishes based on Ayurveda principles that promote a holistic and balanced diet through Six Tastes: sweet, sour, salty, bitter, pungent and astringent.

He has served the Prime Minister of India and other international dignitaries, hosted cooking shows and published a cook book 5 Star Recipes.

Some of the awards he has earned in Singapore include Singapore Chef of The Year 2005, Asian Ethnic Chef of the Year 2005 and was also one of the top three chefs in 2004 and 2005 at the World Gourmet Summit and the Gold Medal winner at the Gourmet Hunt 2004 and 2005.

Currently, he is writing a new book sharing his experiences, advice and guidance tips targeted at young aspiring chefs. He plans to start a new product range of spice mixes formulated to creat popular Indian dishes within the comfort of one’s home.
