Paradise Teochew Set Menus

Paradise Teochew has three set menus available for S$32.80 per person for a minimum of 2 diners available only for lunch, a blissful indulgence for S$38 and another five-course menu at S$58 per person which are available for both lunch and dinner.

Add S$38 per person to the S$38 or S$58 set menu and enjoy wine-pairing with four different wines.

We got to try the S$38 set menu at a media tasting at lunch in the Scotts Square outlet and had a Teochew Style Braised Duo Combination with shredded sliced Irish Fat duck and Braised Egg for the first course. It was paired with a Kapuka Marlborough Sauvignon Blanc 2017 New Zealand. The Crab Meat with Fish Maw Broth also contained mushrooms, bamboo shoots and fragrant dried flatfish. New on the menu is a Steamed Chilean Cod Fillet with Garlic and Beancurd Skin. It is paired with an Egon Muller “Scharzhot” Riesling Mosel 2018 from Germany.

A Hokkien Style Fried Rice with Abalone is fried with julienned egg, asparagus, prawns and shitake mushroom and drenched in an oyster and abalone sauce. It is cooked in a mui-fan style. This was paired with Two Hands Angles’ Share Shiraz McLaren Vale 2018 from South Australia.

For dessert, you have a choice of warm or cold Teochew-style Sweet Soup. This set was a perfect serving portion for lunch so you don’t go back to office with a food coma.

Paradise Teochew has two outlets. One at level 4 at Scotts Square and the other at VivoCity located nearer to the side entrance for pick up and drop of shuttle bus services to and from Sentosa.

Tandoor

Tandoor’s Executive Chef and Head Chef Bobby Krishnan and his culinary team present a carefully curated spring set menu for S$68++ per person which will be available from 20 March to 19 May 2020. Available for both lunch or dinner, the four-course set menu is available in Vegetarian or Non-Vegetarian options.

We got to preview the items in the Non-Vegetarian menu. You have a choice of two starters – the Kebab Tandoori Quail or the Masala Crab Cake. The fragrant and tender Kebab Tandoori Quail was served with vol-au-vent with sautéed mushrooms crépes and truffle paste with Sultana and prune chutney apricot riata. The beautifully- plated Masala Crab Cake appetiser is a spiced crab meat infused with coriander and duck foie grass mango confit, mushrooms, served with toasted brioche, pear and rhubarb chutney.

A first look at the Makai Ka Shorba soup, and you would think it is a pumpkin soup. It is a sweet corn veloutte with masala potato gnocchi, boil quail egg, butter poached scallop finished with grated paneer.

The Main Courses are also as excellent as the first few courses of the set menu. The Sea Perch Pakora was deep fried with cumin in a chickpea batter coated with ibeko caviar, Jerusalem artichokes, avocado and scallion dressing.

What stood out for me was the Australian Lamb Shank that was braised with cherry vine tomato and served on a bed of cassoulet with a side of seasonal root vegetables and braised sauce. The aromatic tender lamb falls off the bone. A separate serving of Dal Mahnai (black lentil slow-cooked overnight with tomatoes and garlic finished with butter and cream), as well as Kesari Pulao (saffron flavoured basmati rice), are provided to pair with the lamb shank.

To end the meal, the Cardamom Ice Cream with citrus profiteroles is served with berry sauce.

Specially Designed Set Menus at Taste Paradise

Taste Paradise has also launched one set menu for lunch only and two other set menus for both lunch and dinner with a S$38 add-on option for wine pairing. Taste Paradise’ set menu starts at S$36.80 per person with a minimum of 2 persons for lunch only. There is also a S$48 and S$68 set.

We tried the S$68 menu for dinner at Taste Paradise in ION Orchard. The six-course dinner was paired with three tasting portions of wines – Yolumba Y Series Viogner Barossa 2018 Australia, Chateau Ste Michelle Dry Riesling 2017 USA and Catena Zapata Vista Flores 2017 Argentina.

Dinner started with individually plated serving of chilled black fungus and jellyfish in vinaigrette, crispy whitebait tossed with salt and pepper and crackling pork belly. This appetiser with the Voigner.

For the soup, we opted for a chicken soup instead of the double-boiled shredded shark’s fin in shark’s cartilage soup.

The third course was a Stewed Japanse Kurobuta Pork prepared with house made barbeque sauce paired with the dry and fruity Riesling. The Poached Chinese Cabbage with Conpoy in Superior Stock was a great next dish after the pork.

The stir-fried ramen with half lobster in XO sauce stood out well and paired surprisingly well with the Catena Zapata Vista Flores 2017 from Argentina.

The Almond Cream with Peach Resin dessert was a great ending to the meal. If you had the S$48 set menu, the Chilled Avocado Purée topped with Coffee Ice Cream is absolutely wonderful.
