100 Bites of Singapore. ALL – Accor Live Limitless Member Special

ALL – Accor Live Limitless has introduced the 100 Bites of Singapore initiative as part of the Singapore Tourism Board’s SingaporeReimagine Marketing Programme, aimed at supporting innovative dining marketing strategies that encourage travel to Singapore. Using the universal language of food, the programme aims to captivate both new and returning visitors, enticing them to experience the diverse array of flavours and cultural traditions the city has to offer.

Running from November 15 to December 30, 2023, the 100 Bites of Singapore programme showcases four restaurants within Accor’s portfolio, each providing a cultural immersion experience centered around sustainable dining. These experiences draw inspiration from the dynamic multicultural hawker and local culinary customs prevalent in their respective neighborhoods.

Allie, an innovative holographic virtual host created through generative art and powered by live mocap technology, will guide diners through the cultural significance and sustainable origins of each bite they savor. A QR code will lead diners to a web-based augmented reality (AR) platform, featuring companion videos offering a visual journey through the neighborhoods of each restaurant. This provides insights into the vibrant culinary culture that serves as the inspiration for each menu.

In terms of sustainability, the menu will incorporate a minimum of 60% locally-sourced or sustainably produced ingredients for each dish, reinforcing a commitment to environmentally conscious dining.

Winestone, Mercure Singapore on Stevens

At Winestone, diners can take a trip back in time to the Orchard Road of yesteryear, sampling nostalgic flavours that have shaped heritage hawker culture into what it is today. Available Fridays to Sundays from 3-5pm, their 100 Bites High Tea Sharing Menu for 5 persons (priced at S$65++ per person) presents four distinct tiers: Homage to Orchard Road, 100% Local, Celebrating Hawkers – an ode to Glutton’s Square from the 60s and 70s – and Sweet Harmony – celebrating multi-racial Singapore. Each tier presents locally-inspired afternoon tea treats. 
Racines, Sofitel Singapore City Centre Derived from Malay as “cape of stakes”, Tanjong Pagar was once mangroves marked by fishermen’s boundaries. Today, it is a bustling district home to iconic food centres. 

Available daily from 5-8pm and priced at S$390++ for five persons, the 100 Bites menu at Racines includes a selection of sweet and savoury dishes that weave together the threads of Singapore’s rich and varied culinary heritage. 

Savoury highlights pay homage to the nation’s rich culinary heritage and celebrate the vibrant street food culture in Singapore, featuring Plant-Based Otah infused with the delicate essence of Manuka Gel, Curried Spice Confit Salmon Cubes, adorned with indulgent Caviar, and Truffle Cabbage Gyoza, served alongside a Chipotle Dip, an inventive twist on traditional dumplings. Sweet options include the Soybean Tart; Radish Cake, adorned with Cream Cheese Frosting; and ever-popular Kueh Lapis. Finally, Durian Puffs pay tribute to the city’s love for the ‘king of fruits.’ 
Asian Market Café, Fairmont Singapore In celebration of the social melting-pot that defines Singapore today, Asian Market Café presents a Taste of Southeast Asia buffet, available daily for lunch and dinner. 
Highlights of the spread include a DIY Noodle Station, where diners can create their own Singapore Laksa and Soto Ayam. Also available is a live Chai Tow Kway station with mixed seafood, preserved radish, mayonnaise, chicken floss, and Chef’s special chilli paste. 
TASTE, ibis Singapore on Bencoolen A historic neighbourhood in Singapore, famed for its Malay heritage, Kampong Gelam has evolved into a dynamic destination serving up Malay and Indian cuisines. Inspired by the local delights around the hotel, as well the restaurants around Arab Street that serve Malay & Indian cuisines, the restaurant pays tribute to these flavours with the Fish Curry & Rendang meat ball on its menu. 

Available from noon until 10:30pm daily and priced at S$42 per set (suitable for 2 persons), TASTE presents a variety of local favourites, enabling guests to sample a wide range of Singaporean flavours in one seating. 

There are two sets to select from, with highlights inclu ing Singapore Laksa Gazpacho, Chicken Rice Arancini, Kueh Pie Tee with Chilli Crab Sauce, and Fish Curry with Red Snapper Curry Mayo. 

Allie will host a live stream on social media to give tourists a preview of the experience and answer any questions, whilst an AR experience will enable foodies to take a virtual bite and see animated cultural motifs come to life.
