PLUME launches The Vine Migration: Explore nine flights with over 50 Notable Wines by the Glass from S$49

The refurbished Pan Pacific Singapore launched PLUME, its cocktail bar, in May last year, serving aviary-themed cocktails. We were captivated by PLUME’s textured monstera leaf walls and an array of hidden birds, signature concoctions, and charming staff and their uniforms.

During our stay at the Pan Pacific Singapore in October, we made a point to revisit PLUME for more cocktails. It proved to be a convenient option for hotel guests seeking a tipple without venturing far. Dive into our experience at the hotel below.

PLUME’s Beverage Manager Matthew Chan

This month, Beverage Manager Matthew Chan has curated wine flights starting from S$49. The Vine Migration features nine wine flights. You can sip and savour over 50 wines by the glass from notable wineries including Leroy, Gaja, and Ornellaia.

Matthew’s curation of these nine wine experiences is influenced by his recent travels and his curiosity for the world of wine. A Certified Sommelier of the Court of Master Sommeliers and a Master Sake Sommelier of the Sake Sommelier Academy, Matthew’s experience prior to joining Pan Pacific Singapore includes being the former Beverage Director of Nouri and Appeitite.

The Vine Migration – Nine Wine Flights

The entry-level flight, in terms of pricing, is a trio of wines from South Africa, Spain, and Portugal. Albariño, Alvarinho & Alvarinha (S$49) explores the impact of warmer-climate terroirs. Albariño is one of Spain’s most fashionable white grape varietals, and this flight offers a variety of different regions of the same strain.

Be prepared for a delightful surprise as the Pinot Noir? (S$109) flight features different alternative varieties with global interpretations that make you question whether they are Pinot Noirs. Three wines from Hungary, Italy, and South Africa will juxtapose one another, showcasing completely different styles that tell their own tales.

Another tongue-in-cheek flight Cristiano Ronaldo’s Hometown (S$159) offers the best of Portugal. Four quintessential wines from the country let you explore abundant vintages that paint the vibrant palette of the star footballers’ homeland, poured from Portugal’s unique Port and Madeira wines.

Come and try out the other flights. Bourgongne (S$179) offers the most prized Burgundian varieties in a mixed pairing of two reds and two whites, while Toscana (S$159) offers a flight that features the ripest fruits of the Tuscan sun, grown in central Italy along the Tyrrhenian coast. Ancient World (S$69) brings you back in time with wines from ancient wine-making communities and cultures of Georgia, Greece and Israel. Varieties of Rhône Valley (S$79) explores the varietal wines originating from Rhône Valley but cultivated elsewhere, such as Thailand and Morroco, while revisiting existing classics of Australia and America. Sauvignon Blanc? (S$59) challenges Sauvignon Blanc enthusiasts with a flight of three different white, acidic and aromatic varietals from around the world, ranging from the Austrian Zilinger and English Bacchus to the Argentinian Balbo.

Finally, America, Down Under (S$59) lets you discover mono-varietals from South America, including Argentina’s Malbec, Peru’s Tannat, and Chile’s Carmenere.

Plume Launches New Bar Bites

New bar bites have also been added to the menu. Highlights include the Poultry Parfait (S$28), Map Dip & Chips (S$32), Eggs & Fish (S$35), Cacao Cigar (S$15), Perched Together (S$18) and Birds of Prey (from S$22).

The Poultry Parfait offers a symphony of flavours and textures. At its heart lies a sumptuous handcrafted chicken liver parfait complemented by toasted sourdough, onion jam and cornichons.

The Mapo Dips & Chips is an Asian rendition of an addictive Tortilla Chips with Mapo Tofu. May be a bit of a mess to eat, but totally worth it.
