At Crystal Jade Palace in Takashimaya Shopping Centre, the White Pepper Crab Meat in Golden Tart (S$22 for 6 pieces) features crispy golden tartlet shells filled with sautéed, sweet, fresh crab meat seasoned with ginger, spring onion, and fragrant white pepper. This dish pays tribute to Singapore’s white pepper crab in one bite.

This thick rice vermicelli with seafood in ‘Satay’ Sauce (S$36 for regular) features slow-braised rice vermicelli with prawns and squid in aromatic ‘sha cha’ sauce that gives the dish a rich umami flavour.

The Sesame Otah Prawn Toast (S$14.80 for four and available for lunch only) here is a rendition of the deep-fried prawn toast we are familiar with, except that Otah replaces the traditional prawn cakes. A comforting dish that is crispy and crunchy.
Other highlights include the Double Boiled Chicken Soup with Fish Maw, Sea Whelk & Hairy Fig Root; Crispy Iberico Pork Ribs marinated with Garlic & Prawn Paste; Plum-Marinated French Ananas Tomato with Balsamic Caviar; and Chilled Durian Coconut Ice Jelly (S$16.80 per person), which comes with silky coconut ice jelly, a generous scoop of durian flesh, and strands of chendol.

The Chargrilled Scallop & Rojak Salsa Tartlet (S$18.80 for 8 pieces) is a rendition of Kueh Pie Tie. Each golden brown cup is filled with zesty Singapore rojak-inspired mix of jicama, pineapple and cucumber, dressed with a touch of rojak sauce and crowned with char-grilled scallops.

The S$42 regular portion of Australian Wagyu Beef Brisket in Pineapple Nanyang Curry is very appetising. Chunky cuts of Australian wagyu brisket are slow-braised in a fragrant Nanyang-style curry filled with pineapples, onions, okra, and aromatic kaffir lime leaf.

I love the Lychee Pastry (S$12 for 3 pieces). The blushing pink dessert is a delicate pastry shell filled with sweet lychee flesh and Chinese yam. If you love lychees, you have to order this.
Other creations here include the Double-boiled Pork Rib Soup with Black Garlic, Preserved Radish, Conpoy and Sea Whelk; Stir-fried Mustard Greens with Golden Fungus, Blak Bean & Lily Bulb; and Black Glutinous Rice with Attap Seed and Pandan Ice Cream.

Have you had Hainanese Chicken Rice in a pan fried dumpling before? For S$6.80 for 3 pieces, available until 5pm daily at Crystal Jade Hong Kong Kitchen for a limited time, Singapore’s unofficial national dish has been reimagined as a pan-fried rice-flour dumpling filled with glutinous rice and tender chicken pieces. There’s even a house-made chicken rice chilli for the essential finishing touch.

The Sizzling Pig Blood Curd & Tofu with Salted Fish & Minced Meat at Crystal Jade Hong Kong Kitchen is for those who favour pig blood. It was our first time having pig blood since its return to the menus of Singapore’s restaurants. Silky pig blood curd and tofu are braised with salted fish, minced pork and a heady base of ginger, garlic and chillies in a sizzling claypot.

The Gula Melaka Chendol with Coconut Ice Cream makes a great end to a fabulous meal.
Other highlights include Singapore-style Chilli Prawn & Pan-Fried Rice Roll with Dried Shrimp; and Nanyang-style Roasted Iberico Pork Ribs.
