Work has started pouring in, and a trip overseas may seem impossible. But, why not enjoy the best of what Japan’s finest seasonal produce and season straight from home? From 20 January to 26 February 2016, Chef Hiroshi Ishii will take you on a Gastronomic Discovery of Hokkaido through three eight-course kaisekis; Hokkai, Donan or Hakodate right at Keyaki, Pan Pacific Singapore.

Expect the exceptional seafood we know and love from the northern shores of Japan. The highlights include tuna, botan shrimp, surf clam and, even, uni (sea urchin) served as sashimi or sushi. They will be as fresh as you can get in Singapore. There is also the Kinki Fish, a.k.a. Deep Sea Perch, simmered or grilled. This is not to be missed as the cold waters of Japan’s peak helps the fish develop a delicate layer of fat, giving its pink flesh a sweeter flavour and tender texture.

Another favourite would be the Grilled King Crab, where the Chef has taken delicate care to only lightly grill the crustacean to retain its original sweet flavour. Last but not least is the heart-warming bowl of Ishikari Nabe  which features salmon, seasonal vegetables and Hokkaido potatoes simmering in a savoury Miso broth.

The eight course kaiseki is priced at S$168 for Hakodate, S$188 for Donan and S$198 for Hokkai. Items are also available a la carte, but subjected to availability.
