Dan Segall (Executive Chef)
Recognized as one of the most dynamic chefs in Asia, Dan Segall has had a hand at running many of Asia’s award winning restaurants, including Zuma in Hong Kong. He’s received a countless string of accolades from landing himself on Conde Nast Traveler’s coveted Hot List to San Pellegrino’s prestigious “50 Best Restaurants in the World”. Segall’s claim to fame is his creative flair for reinventing Asian Cuisine. While critics have hailed his masterpieces as everything from “freestyle” to “fusion”, the maestro himself simply calls it “Modern Asian Cuisine”.
Dario Buonavoglia (Chief Sommelier)
Previously Head Sommelier at London’s Michelin-starred restaurant Hakkasan, Buonavoglia is the perfect addition to the all-star team. His wine list is a personal selection, bringing the world’s best wines to Singapore. Carefully categorized into a thematic structure, the wine list brings you on a journey of the wine world through the eyes of KU DÉ TA. Buonavoglia has also lent his experience to the judging panel for the Sommelier Wine Awards – Imbibe Magazine in London from 2008 – 2010.
Vinnie Quek (Musical Director)
Critically acclaimed Musical Director Vinnie Quek will work his magic, setting the mood and putting the finishing touch to KU DÉ TA’s breathtaking ambience. Quek is a prominent figure in the Asian music scene, having worked in both Hong Kong’s prestigious Kee Private Member’s Club and Singapore’s world-renowned Zouk Night Club.
