New in Sentosa, QUAN Hotpot at Hotel Michael with Signature Laksa and Mala Broths

At Resorts World Sentosa, a new casual hotpot experience is taking shape with the opening of QUAN Hotpot at the grand steps of Hotel Michael. Designed as a contemporary take on communal dining, QUAN centres on a thoughtful balance of the five elemental flavours, sour, sweet, bitter, spicy and salty, expressed through carefully crafted broths and premium ingredients. The experience begins the moment you step in, where striking glass vessels filled with deep red mala oil set the tone, hinting at the bold, layered flavours to come.

QUAN (圈) comes from the Chinese word that means “whole” or “all-encompassing,” reflecting togetherness, where hotpot is a communal meal where everything comes into one pot. It also reflects the balance and harmony of tying into the five elements concept of flavours and a complete dining experience, putting together broths and ingredients. QUAN Hotpot invites guests to gather around to enjoy a meal together.

The space is designed to feel warm and inviting, with natural wood finishes and a soft amber glow that encourages relaxed, communal dining. A standout feature is One Pot, Many Worlds, a mural by Sam Lo. It weaves together cultural references with ingredients like star anise, goji berries and Sichuan peppercorns, alongside symbols of the shared hotpot experience.

The artwork mirrors the restaurant’s philosophy, different elements coming together in one broth, much like people from varied backgrounds gathering around the table to eat, connect and trade stories. Sam Lo’s works have also appeared in spaces such as the Peranakan Museum, Shake Shack Craig Road and Coliwoo Middle Road.

Enjoy meats such as the Australian Wagyu beef and Iberico Pork, fresh seafood including live Boston lobsters, Korean Abalone and tiger prawns, as well as seasonal vegetables and locally sourced produce.

Besides hotpot, QUAN also offers smoky and charred premium cuts on the Josper Grill such as the Ibérico Pork Secreto, Grilled Black Tiger Prawns, Kampong Chicken Thigh, Locally Farmed Grilled Oyster Mushroom and Satsuma A4 Wagyu Beef Striploin. Prices range from S$18 to S$108.

A selection of wines from China as well as Baijiu is available to pair with your meal.

QUAN Hotpot – The Signature 5 Element Hotpot Set

A variety of set menus as well as à la carte items are available, but the one we got to try was the Signature 5 Element Hotpot Set priced at S$68++ per person. It was great value and I couldn’t finish everything that was served

The Signature 5 Element Hotpot Set Menu takes you through a well-paced, balanced meal, bringing together broths, premium proteins, and fresh produce in one cohesive spread. You start with a choice of signature broths before moving into a line-up of seafood such as tiger prawns, scallops and abalone.

I had the Traditional Congee Broth where grains of rice no longer exist. Flavourful and slightly thicker in consistency, the broth becomes more flavourful when the meal advances. And excellent choice.

Meat options are equally considered, featuring selections like Australian pork belly, US beef short plate and lamb shoulder, alongside house-made delicacies including hand-formed beef and shrimp pastes. The set is rounded off with local vegetables, mushrooms, tofu and the colourful 5 Element Fish Noodles, before ending on a simple dessert, making it a complete, no-fuss way to experience the concept in one sitting.

The 5 Element Fish Noodles (S$10 a la carte) are as much a visual draw as they are a textural one, arriving in a neat spectrum of colours that reflect their ingredients, tomato, sweet potato, pumpkin, charcoal and spinach. Each strand is delicate yet pleasantly elastic, holding its bite well in hotpot without turning soft too quickly. It is a thoughtful carb option that feels lighter than your usual staples, though you can still fall back on familiar choices like glass noodles, udon or steamed rice if you prefer something classic.
