The Capitol Kempinski Hotel Singapore has launched the Kempinski Sunday Brunch at 15 Stamford by Alvin Leung sin 28 February 2021 and a Brunchkation staycation experience to accompany. The Brunchkation package is priced from S$488++ per room per night and comes with the Kempinski Sunday Brunch for up to two people.

Priced at S$118++ per person, the Sunday brunch features six courses featuring signature dishes of Demon Chef Alvin Leung as well as brunch classics. Add on S$48++ for sparkling wine beverage package, S$68++ for the Champagne Beverage Package or S$118++ the Vintage beverage package.

Starters

The first course is a sharing appetiser plate. This one-serving per table platter features fresh seafood on ice. Enjoy poached Maine lobster, freshly shucked oysters, chilled black tiger prawn, steamed Australian blue mussels, Himalayan salt cured king salmon with ketchup shallot vinaigrette, Southern Thai assam Vinaigrette and Yuzu Ponzu.

The second course is a charcuterie board and salad. Similar to the first course, you oney get one serving per table. The Charcuterie board features Jamon Iberico De Bellota, beef bresaola, Iberian chorizo, salami and marinated taggiasca olives, roasted shallots and sourdough. The burratina salad is served with citrus fruits, beets, puffed rice and green lime emulsion.

Enjoy unlimited servings of the third-course pass around snacks which are changed weekly. You’ll enjoy the Foie Gras with Asian spiced banana and dark rum raisin. Some of us had more than one serving. Drink the Double Boiled Chicken Broth with carrot, celery and convoy floss from the coffee cup in one gulp. Enjoy the Fried Baby Squid with red curry emulsion and mango relish as well as the Braised Black Angus Beef Brisket with Chinese herbs and La Ratte potato chips or the Tuna Akami with sago, cucumber, shallot and Keta roe

The Mains

Choose one of 5 large plates for the fourth course. If you haven’t had enough seafood, go for the Chilean Sea Bass with Bonito curd, knob, nori and miso glaze. We highly recommend the Bone in Lamb Roast Char Siew with roasted broccolini and Korean char siew glaze.The tasty meat is not gamey and falls off the bone.

Other choices include the Black Angus Beef Rib Eye with charred broccolini, Sarawak black pepper sauce, and the signature 15 Stamford Laksa with tiger prawn, shrimp floss, smoked hen’s egg. I had the Rotisserie Free-Range Chicken with yellow ginger glutinous rice, coconut and pickled cucumber.

Dessert and Cheese Wagon

The Sharing Dessert platter offers a plethora of six sweets and a toasted coconut ice cream. Sink your teeth into the grilled honey pineapple or pair it with the toasted coconut ice cream. Chocolate lovers will enjoy the Valrhona Black Forest Butter Cake. Then if you are already too full, enjoy the Yuzu tart, Tropical Mousse and Gula Melaka Chendol Curd. If you have a sweet tooth, you will be delighted that this course is unlimited.

That’s not the end of the meal. Be sure to save some space for unlimited servings of oral pleasure from the Cheese Wagon. 11 different types of cheeses to go with Muscatels, dried fruits, chutneys and lavash.
