The Caribbean might be miles away, but we’re not all that different. We all love to do nothing more than share good food, drinks and conversations with our best pals. Only difference? We call it lepak, they call it lime. So, with a newly launched laid-back space like Bago at Lime House (FB/Instagram) which promises to be that charming, laid-back space to do just that, we expect no less!

Abbreviated from “Tobago”, a small island paradise where owner, Chris Morris, was born and raised, Bago is an extension to 3-year-old Lime House. It epitomises the “welcome home” approach, and promises to serve up authentic Caribbean cuisine and a slice of life from the colour island region just like the former.

This July, they celebrate this spanking new space with something that’s quintessential to the region – rum. Chris joins hands with Global Rum Ambassador, Ian Burrell, to bring his passion for the spirit through a 4-course Caribbean Rum Dinner (S$125++/person) filled with vibrant flavours and Caribbean-inspired tipples.

Diners will get to choose between two mains and two desserts. Hot favourites this time round turned out to be the crisp yet succulent Pan-Fried Seabass seasoned beautifully with ginger, turmeric and chilli, and the warm Spice Banana Cake served with an indulgent scoop of Honey & Fig Ice Cream. it may have been the 4 rounds of rum talking, but the latter is sure to take dessert lovers straight to a Willy Wonka-esque paradise.

One of the most eye-catching, or should I say instagram-worthy, cocktail has got to be the Snow Cone. Made with Diplmatico Reserva (Venezuela), it is served up with an ice cream cone and strawberry ice cream (because one can never have too many ice cream). Still, the winning cocktail goes to Morris (S$27++). It is a refreshing tipple reminiscent of an old Carribean rum shop experience and Chris’ preferred way to enjoy his rum – with just coconut water, on the rocks. It is not on the rum dinner menu, but it is the best drink to start the night off with, or the first before heading back down to the bar for more.
